Traditionally, the Chinese have prepared their dishes without written
recipes. And even today, many Chinese families do not rely on cookbooks
for their traditional meals, rather they learn by observing the more experienced
chefs in the household.
While this can make it difficult to duplicate the flavour of any given
dish with precision, cooking with one's heart can result in an equally
delicious meal.
The recipes we have included here have been adapted from traditional Chinese
methods as well as from the kitchen of the legendary Noodle
Makers' restaurant. Follow them directly or adapt them to your own
personal tastes. Either way, we hope you enjoy both the experience and
